Homemade Oreo© Cookies

One word: Amazing. If you have any affinity for Oreo cookies at all, you will happily devour these without looking back. Two chocolate wafer cookies that sandwich a vanilla cream between them – if you close your eyes you may not even notice that they didn’t come out of a blue package. Well, that’s not entirely true. They are better because they’re homemade, of course. The familiar chocolate wafer packs an insane amount of richness and a perfectly balanced flavor, thanks to the use of Dutch-processed cocoa powder. And the vanilla cream in the middle? The texture is perfect and you can easily twist these apart just like you did when you were a kid. Whether you lick off the cream the middle, eat one side at a time, or dunk the whole thing in milk, one thing is certain: you will absolutely enjoy eating these. You’ll feel like a kid again, all while enjoying a grown-up, non-processed version of a favorite cookie.




For the Dough:
2 cups all-purpose flour
½ cup Dutch-process cocoa powder
½ teaspoon baking powder
½ teaspoon salt
2 sticks (8 ounces) unsalted butter, softened
¾ cup granulated sugar
1 large egg yolk
1 teaspoon pure vanilla extract

For the Filling:
½ stick (2 ounces) unsalted butter, at room temperature
¼ cup vegetable shortening
2 cups sifted confectioners’ sugar
2 teaspoons vanilla extract

Garnish: Decorative sugar (optional)

1. Whisk together the flour, cocoa powder, baking powder and salt.

2. Beat butter and sugar with an electric mixer until pale and fluffy, then beat in yolk and vanilla. At low speed, mix in flour mixture in 3 batches just until a dough forms. Divide dough in half and form each piece into a 6-inch square, then chill, wrapped in plastic wrap, until firm, 2 to 3 hours.

3. Preheat oven to 350 degrees F. Grease two baking sheets or line with parchment paper or a silicone baking mat.

4. Roll out 1 piece of dough between sheets of parchment paper into a 14×10-inch rectangle (1/8-inch thick). Slide dough in parchment onto a tray and freeze until dough is firm, about 10 minutes. Repeat with remaining dough.

5. Cut out as many rounds as possible from first chilled square with a 2-inch fluted or round cutter, reserving and chilling scraps, then quickly transfer cookies to a buttered baking sheet, arranging them ½ inch apart. (If dough becomes too soft, return to freezer until firm.)

6. Sprinkle half of cookies with decorative sugar (if using), then bake cookies until baked through and slightly puffed, 10 to 12 minutes. Cool on sheet on rack for 5 minutes, then transfer to rack to cool completely (cookies will crisp as they cool).

7. Make more cookies with remaining dough and scraps (re-roll only once).

8. To make the filling, beat the butter and shortening together at medium speed until combined and smooth. Reduce the speed to low and gradually beat in the sugar and vanilla. Increase the speed to high and beat for 2 to 3 minutes until the filling is light and fluffy.

9. To assemble the cookies, pipe a heaping teaspoon of filling onto the flat side of the plain cookies. Top with the sugared cookies to make sandwiches. Store in an airtight container at room temperature.

Yield: About 3 dozen sandwich cookies

Grilled Asian Pork Tenderloin with Peanut Sauce

Servings: Serves four to five

Ingredients:
1 cup light coconut milk
1/2 cup smooth, natural peanut butter
1/4 cup soy sauce
3 tablespoons fresh lime juice
3 tablespoons brown sugar
2 cloves garlic, minced
2 teaspoon ground coriander
2 small pork tenderloins (about 2 pounds)
Extra Virgin Olive Oil for the grill

Directions
In a large bowl, whisk the coconut milk, peanut butter, soy sauce, lime juice, brown sugar, garlic, and coriander to make a smooth sauce.

Trim the pork of excess fat; butterfly the tenderloins by splitting each one lengthwise almost but not quite all the way through, so the halves remain attached.

Open each tenderloin like a book, cover with plastic wrap, and pound to an even 1/2-inch thickness with a meat mallet or the bottom of a small skillet. Put the pork tenderloins in the bowl with the marinade and turn to coat. Cover with plastic wrap, and let sit for 2 hours at room temperature, or overnight in the refrigerator.

When you're ready to cook the pork...heat a gas grill with burners on high. Clean and oil the grate. Remove the tenderloins from the marinade, letting excess marinade drip back into the bowl (don't discard the marinade).

Grill the tenderloins, covered, turning once, until just cooked through, 5 to 7 minutes total (cut into one to check). Transfer to a carving board and let rest for 5 minutes.

Meanwhile, pour the marinade into a small saucepan and add 2 tablespoons water; bring to a boil (*WARNING: This liquid MUST be brought to a boil to kill any bacteria from raw meat juices), reduce the heat, and simmer for 3 minutes. Remove from the heat. If the sauce seems too thick, thin it with 1 or 2 teaspoons water. Slice the pork and serve with the sauce on the side.

Serving Suggestion: Serve with steamed jasmine rice and stir-fried snow peas or vegetable mix.

My Belated Mothers Day Dinner
I had a nice Mothers Day this weekend. I postponed it till bfs surgery was over since things were getting pretty hairy around here. I'm glad I did. My daughter would have had to run between two houses that day anyway to see her MIL. This way I did it on Saturday so nobody had to leave early to get home for work the next day and we could have a leisurely day. But I wore myself out cooking and cleaning. This house has been a terrible mess and this week was so darn hot, I just did nothing. So Saturday I had no choice but to cook and clean as much as I could get done.

I had a 4 rib prime rib I thawed overnight for our dinner. I bought a whole one at Christmas time and had them cut it in half. I froze half then,,,,cuz the price was just incredible. So we had prime rib, my tomato, zucchini gratin and sour cream mashed potatoes. My daughter bought a great chocolate mousse cake that was very light.

Seas Prime Rib

1 prime rib with bone, any size, mine was a 4 bone roast
lots of garlic, for this one I used about 6lg. cloves
S & Freshly ground P
Dried thyme, I used about a tsp for this

Preheat over to 500 degrees.

Make a paste of everything but the roast. I do this by hand by chopping the garlic fine and then adding the salt and smashing it together over and over with a knife. I do this when I make salad dressing too. Its a chefs trick. But if you don't have that you can use a sm. food processor. After the garlic is in paste form I
add the Pepper and thyme and touch of Olive oil to ease spreading it all over the roast with my fingers.

Put roast in pan and put in preheated oven for 1hr. Then lower heat to 350 degrees and roast for another hr. From this point on test with an instant read thermometer. You want it to be about 130 degrees for medium. If you have a
smaller roast test earlier.

Once it has reached the correct temperature take it out of the oven and just let it rest for 15 min. so all the juices distribute properly. It will continue to cook while this is sitting. I make a bit of au jus by adding some beef broth (not consommé, too salty) to the drippings and stirring up all the brown bits till bubbly. Then I strain it. If there is too much fat in t
he pan , remove it or the au jus will be a greasy mess. This will serve 6-8.


My Belated Mothers Day Dinner

I have posted this recipe on my pesto blogs before but I thought Id post it here again for those that missed it. I have made this and changed it a bit. The original called for 2c. bread crumbs which for this amt. is just too much. I also doubled the mozzarella cheese cuz we love it. I substituted marinated artichoke hearts in a jar for the fresh and we just loved this. Its almost like a vegetable lasagna but no pasta.

Pesto Zucchini Tomato Gratin

For the topping::


1 cups Bread Crumbs
2 tablespoons extra virgin olive oil
dried Italian Herbs or basil/oregano/marjoram, to taste

For the veggies::

3 medium zucchini, sliced in long pieces, 1/4 inch thick
5 cloves garlic, chopped
A handful of halved artichoke hearts or a small jar of marinated artichoke hearts, drained and rinsed of most of the marinade
4 tablespoons prepared basil pesto
2-3 vine ripe tomatoes, sliced thick

2 tablespoons balsamic vinegar
1 pinch salt, to taste
fresh ground black pepper, to taste
8 oz fresh mozzarella cheese, sliced - you can use garlic and herb marinated mozzarella also

Preheat oven to 350 degrees F. Lightly oil a gratin dish or large pie plate.Place the crumbs in a bowl and using a fork, toss with a tablespoon of extra virgin olive oil to coat; season with Italian Seasoning or dried basil/oregano/marjoram.

Heat a tablespoon of olive oil in a large skillet. Add the zucchini, garlic and artichokes, and sauté briskly just until the zucchini is a bit golden and still tender-crisp. Remove from heat and pour the veggies into a bowl to cool
slightly. When cooled, gently toss the zucchini mixture with the prepared basil pesto, to coat. Layer the pesto veggies in the gratin dish/pie plate.

Spread half of the crumbs on the squash mixture. Layer with slices of mozzarella. Top with sliced tomatoes. Sprinkle the tomatoes lightly with balsamic vinegar. Season with sea salt and pepper. Sprinkle the remaining
breadcrumbs over the tomatoes.Bake the gratin until it is bubbly and hot, about 20-25 minutes. Serves 4.

Heck, Id just serve this as a side dish or even just a vegetarian type meal with some nice crusty bread!


My Belated Mothers Day Dinner
I make alot of these because my son just adores mashers.

Sour cream Mashed Potatoes

5lb. potatoes, peeled and cut into sm. chunks
1 stick of butter
1/2 c. sour cream
cream, half and half or milk
1 bunch of chives or green onions, chopped fine
S & P

Put potatoes in lg. pot and cover with water and about a tb. salt. Cook till tender, then drain. Put back in pot and throw in butter. For me when I'm busy I do it to this point and let the butter melt while I do other things. Once melted, mash potatoes. Add sour cream and mash again. If very thick add a bit of cream or milk to get the right consistency. You don't want them runny. Taste and adjust S & P. Then stir in chives or green onions.

Arizona Red Apple Green Tea with Ginseng Review
OK, I didn't get this when I was at work, but whatever. Every once in a while I feel like an iced tea and the Arizona one is the most popular here. You can find these beverages in every location that sells drinks. The cans have a 99 cent price emblem that is a part of the label so you know they will always be the same price regardless of the location...unless the store is run by heartless, greedy assholes. The cans are also quite big - 695 mL!!! For 99 cents you might get the impression that the tea does not taste very good...but it does. Recently (not really), they have added some new iced teas to their product line. I recently saw some Half & Half cans - half juice, half iced tea. I wanted to buy one of those, but as my luck would have it I couldn't find one. I
picked up a can of their Red Apple Green Tea with Ginseng because of its attractive label. I should also mention that I got the can for only $0.88. Taking it up to the cashier, it came up to 99 cents with tax. I have never noticed if that's how much stores usually charge because I have never bought just a can of iced tea or if the can says 99 cents including taxes. Anyways, onto the iced tea.

As expected, the iced tea is pretty good, it tastes exactly as described - strong red apple flavouring taste with hints of ginseng. The green tea has a mild taste that goes almost unnoticed because of the apple taste. In addition to the red apple, ginseng and green tea, a taste of honey is also detectable. How can I tell the ginseng apart from all the other flavours? Once you have a korean ginseng drink, you will remember the taste for the rest of your life. Beware, on its own, the ginseng beverage does not taste very good. Of course the beverage also tastes like the good old Arizona Iced Tea, which they have probably used as a base. The flavours blend nicely and together and make the drink enjoyable. The aftertaste is on the sweeter side with hints of red apple. Did I mention that I paid only $0.88 CAD for this?

Scores:
Cost - 10/10
Taste - 8.2/10

Overall - 18.2/30...at $0.88 you would have to be stupid not to buy this

Hijinks Energy Mixer Review
A few weeks ago I reviewed 5150 energy mixer and was quite pleased with the results. Over the last few days I have been testing another energy mixer - Hijinks. This one is a little different and does not instructions on how to mix it. It is completely up to you. You can even shoot it if you wanted to. Since I only had 1 of these bottles, and it contained only 200 mg, I only tried it with a couple of beverages.

Tea

Of course it had to be tea - my morning drink. Like with 5150, I added this to a mug full of strong Earl Gray Royal, whose flavour is so strong, it can cover almost everything. I poured half of the bottle and stirred. There was absolutely no change to the aroma and the taste barely changed. There is a dull undertone, which resulted in a slightly bitter aftertaste, but that was it. The mixer is barely noticeable even at half a bottle.

Orange Juice

I poured myself a 12 oz glass of orange juice and added only half of what was left in the Hijinks bottle, which was 1/4 of the entire mix. There was no change to the taste, so I added the remaining liquid. Again, there were no changes to the taste, which was great. I guess the orange juice flavour was strong enough to overpower the caffeine bitterness.

With the tea, the mixer worked a bit slow. I barely felt anything in the first 30 minutes and then it slowly and gradually started to kick in. It took about 50 minutes for me to feel the full effect of Hijinks, but the good news is that it lasted for a few hours and the energy boost was clean, very usable. There were no jitters or any other negative sides, such as a crash at the end.

The mixer performed a bit better with the orange juice and I felt a boost in energy right away from the from the juice. That gave Hijinks enough time to do its thing and get absorbed by my body. The rest of the effects were similar to that of the tea.

PUMPKIN SPICE LATTE

I love pumpkin lattes. So glad starbucks came out with them. I wait all yr for when they make them but I cant always afford to have it or cant always get there so I found this great alternative. Its from the Susan Branch cookbooks. If you have never seen her books your in for a visual treat. They are like talking to a girlfriend.....stories, great watercolor drawings and lots of tried and true recipes.



Pumpkin latte makes 1


2 heaping tb. canned pumpkin
1 tb. brown sugar
1tsp. vanilla
1/2 tsp.pumpkin pie spice
hot coffee, decaf or espresso
hot milk
Into each lg. mug put first 4 ingred. Fill cup halfway with coffee and stir well. Fill cup with hot milk and whisk. Top with whipped cream, dust with nutmeg.
PUMPKIN SPICE LATTEThis is from Susan Branch's Autumn cookbook. Sometimes I add a bit more fresh pumpkin but too much just makes pumpkin sludge at the bottom of your cup. And Ive also used vanilla syrup instead of brown sugar and vanilla. I just use regular coffee most times cuz thats what we have around here but its delish. The biggest problem is what to do with the leftover pumpkin, I can never use it all before it goes bad. Im thinking maybe next time of freezing measured portions on a tray then popping them in a freezer bag. It should keep and u can take out what you need and it should thaw fast. Of course you wouldnt want to put it frozen in your hot coffee or it will make it cold fast!

At the end of the day whilst watching it from my humble abode here in the UK it is in my opinion that Spain were indeed worthy winners, although it was generally a disappointing tournament all-round in terms of the quality of the football played, and the embarrassment and humiliation the England players and management team bestowed upon our nation!

Lovage Part 2 recipes

Now onto some recipes to give you ideas but you could use Lovage anywhere you would use celery or parsley. I love to add it to my soups. It seems to give them a bit more body too.


APPLE LOVAGE CHUTNEY
6 cups apples peeled cored and chopped

1 cup lovage fresh

1 medium red bell pepper cored, seeded and chopped

1 medium tomato peeled and chopped

1 medium tomato green, peeled and chopped

1 medium onion peeled and chopped

3 cloves garlic

1 cup golden raisins

1/4 cup ginger root peeled and minced

1 cup brown sugar, light packed

1 cup white wine vinegar

1 tablespoon mustard seeds

1 teaspoon celery seeds


Combine all ingredients in non-reactive pan.Bring to boil over med-high heat, stirring constantly.Reduce heat to med-low and simmer, uncovered, stirring frequently, for 45mins, or until thickened.Prepare jars, lids and boiling water bath.Fill jars with hot mixture, leaving 1/4 inch head space. Wipe rims with clean towel and attach lids securely.Place jars in boiling water bath, and when the water returns to the boil, process for 15 min. Prep: 20 Cook: 60 Total: 80 Yield: 6 half-pints



CORN ON THE COB WITH LOVAGE BUTTER

4 husked ears of corn on the cob

4 tablespoons of butter

1 tablespoon of shreded Lovage

Salt & Pepper to taste


Steam or boil the corn until cooked through. Melt the butter in a pan and add the salt, pepper, and Lovage. Heat gently until Lovage is tender, 3-5 minutes. Pour over corn and serve hot.

PEAS AND CARROTS WITH LOVAGE

1 pound of fresh or frozen peas

1 1/2 pounds of baby carrots - sliced

2 tablespoons of chopped Lovage

3 tablespoons of mayonnaise

3 tablespoons of regular yogurt

1 teaspoon of mustard


Combine the peas and carrots and steam for 10-15 minutes. Set aside. Mix the other ingredients thoroughly, then add the peas and carrots. Place in the refrigerator and allow to cool completely, and serve as a cool and refreshing side dish.


Lovage Butter Ingredients:

4 tablespoons of butter

1 tablespoon of minced lovage

Salt & Pepper to taste


Melt the butter in a small pan and add the salt, pepper, and lovage. Heat gently for 3-5 minutes. Serve over vegetables.



EGG SALAD WITH HERBS


6 large eggs

3 green onions thinly sliced

2 tsp. minced lovage

2 tsp. minced parsley

1 tablespoon snipped chives

1 cup light or regular mayonnaise

to taste salt and pepper (optional)


Hard boil the eggs, them place in a bowl of cold water to cool. Peel them, place in bowl and mash. Add the green onions and herbs, then add chives, mayonnaise and mustard. Season with salt and pepper. Serve on bread or on a bed of lettuce.



POTATO AND LOVAGE SOUP


2 Tbsp. olive oil

1 onion, chopped

3 cups potatoes, peeled and cubed

3 cups water

Approx. 1 1/4 cups milk

3 Tbsp. minced fresh lovage plus garnish

salt and black pepper to taste


Heat the oil in a large saucepan and add the onions and potatoes. Cook over low heat for 10 minutes. Add 3 cups of water and continue simmering until the potatoes are tender. Remove from the heat and allow to cool slightly. Puree the cooled mixture in a food processor or blender. Place into a clean pan and stir in the lovage and milk slowly, stopping when you feel it's the right thickness. Heat through, and serve with a garnish lovage leaves. Makes 4 servings.

LOVAGE VINEGAR


You will need: 1 quart cider vinegar 2 large sprigs lovage Place into a bottle or jar with a lid. Keep in a cool, dark place for 3-4 weeks. Use in dressings, or stews.




LOVAGE OIL

10-lovage leaves

2 shallots

1-2 tb madagascar pepper

Olive oil


Rinse the lovage leaves and chop the shallots finely. Put lovage, onions and pepper in a jar and pour over the oil. Let the oil seep for 3-4 days. The oil is particularly good when frying fish and pork, but it can also be used in marinades, dressings etc.



HALIBUT WITH APPLE, LEEK and LOVAGE RAGOUT

Leek, 1 large or 2 medium or 3-4 small

Butter, 1 tablespoon

Dry white wine 1/2 cup

Tart apple (I use granny smith) 1 large or 2 small

Apple cider or juice., 3/4 cup
Lovage fresh, chopped 2 tablespoons

Vinegar (mild and pale - white wine, sherry, rice) 1 tablespoon

Salt 1/4 teaspoon

Pepper to taste

Halibut (or other whitefish) 1/2 - 3/4 pound


Clean and julienne just the white part of the leek . (Save the green part of the leek for another use.) Melt the butter in a saucepan over medium heat. Add the leeks and cook, stirring frequently, until they soften and start to brown, about 10-15 minutes. Add the white wine and simmer until the liquid is absorbed. Add the apple cider and continue cooking until liquid is reduced to about 25% of initial volume. (This is usually about the time the tops of the leeks are exposed above the liquid.) Add the diced apples,lovage, vinegar, salt and a grind or two of pepper and cook, stirring often, for another minute. Remove from heat. (You can prepare this ahead to the point and store the ragout in the refrigerator for up to 2 days.) Cut fish into individual portions and place in a single layer in a baking dish. Pour ragout over the top of the fish and cover the dish with a lid (or parchment) and bake in a preheated 425° oven until the fish is firm and milky, the center is barely translucent and the flesh flakes with a fork, about 10-15 minutes. Note: Can make this with pork chops, brown one side of the chop on the stove before baking it in the oven as described for the fish.

{Christmas} Baked French Toast

Breakfast on Christmas morning is a big deal in our house and we'll be including this as part of our buffet this year. 

This version of Baked French Toast is a bit healthier than many other versions we've found. We've prepared this recipe with both real eggs and egg substitute and results were great either way.

{Christmas} Baked French Toast
 
Ingredients:

4 ounces light cream cheese in a tub
4 ounces fat-free cream cheese in a tub
3/4 cup Splenda Granular (or white sugar)
3 tablespoons unsalted butter, softened
2 teaspoons pure vanilla extract
1 1/2 teaspoons cinnamon
6 large eggs, room temperature
3 cups nonfat milk
1 pound sourdough, or whole wheat bread (1-inch slices)
2 teaspoons powdered sugar (optional)

Directions:
  • Spray Pam© cooking spray into a 9 x 13-inch baking dish
  • Beat cream cheeses, Splenda, butter, vanilla, and cinnamon until smooth. 
  • Blend in eggs, one at a time
  • Add milk and mix well. 
  • Soak each bread slice in egg mixture and place into prepared pan. 
  • Pour remaining batter over slices. Cover and refrigerate for at least 1 hour and even overnight.
Preheat oven to 350°F. Bake for 40-45 minutes until puffed in center and lightly browned.
Remove from oven and lightly dust with powdered sugar if desired.

I was walking through LobLaws today and got the sudden urge to buy a cold milk drink when I walked passed the milk section I have slightly lactose intollerance so I cannot drink regular milk drinks, but soy is ok. Strawberry is what my body was aching for. I got this at only $2.19 for almost a litre...well, it was actually exactly a quart - 946 mL. I guess I could have bought the juice boxes at 9 for $5, but I wanted the big carton.

Dodging traffic and running to my office, I washed my crusty tea mug and poured myself a nice volume of the beverage. For those who haven't had soy beverages, there are two kinds - those that taste like milk beverages and those who don't. I did say I am lactose intollerant, but I have had milk many times before...it just doesn't sit well with me after consumption.

Well, this was one of the good kinds - it carried a pleasant strawberry scent and none of the soy one. Gulping my portion, I noticed it tasted a lot like strawberry milk, just a bit thicker. The aftertaste was not bad as well. I didn't get that bad taste in my mouth minutes after drinking it, a milky, strawberry taste lingered for quite a while. Overall, this is a pretty good and healthy drink that I would purchase again and recommend to others.

Overall - 17/20...would definitely buy this again

EQ Smart Energy Drink Lemon Lime Review
I finally found the time to continue with the EQ Smart Energy Drink line-up. Today's tablet is lemon lime flavoured and this time I poured less than 8 oz of water to see what it will do for the flavour.

Taste

The result has the recognizable lemon lime aroma, but the taste is still very mild. You should expect this from a tablet that promises only 5 calories. A squirt of concentrated lemon juice will improve the taste significantly, but unfortunately I did not have any on hand. Though there is barely any lemon or lime in the taste, it is sweet, just like the other tablets and because it is not carbonated, it goes down really fast. Overall the flavour is very similar to the other ones with only subtle differences in the aroma and taste.

Energy

You will find the same energy blend in here as well - 1,680.7 mg. Because I used less water, I drank the energy mixture faster and thus I felt the results earlier - around the 10 minute mark. It wasn't for another 20 or so that I felt fully energized and ready to go. The feeling lasted for quite a while but it wasn't as intense as some energy drinks on the market. It was more melow and easy going and like the other EQ tablets, I did not experience a crash at the end.

Energy - 8/10

Overall - 13.8/20...good energy kick, but a bland flavour
